Spanish tortilla or potato omelette

Tortilla de patatas is the Spanish omelette par excellence, known internationally and essential in all bars and homes in Spain. It is a very easy dish to prepare, for which basic and affordable ingredients are needed: potatoes, eggs, oil and salt. It is also a dish that can be personalised to your taste: with or without onions, more or less set, potatoes more or less fried, with more or less egg… That is why there is not a single Spanish omelette recipe. In fact, omelettes have been made since 1519 and in 1817, in Navarre, the Spanish omelette was officially mentioned for the first time.

Tortilla paisana

Like the Spanish potato omelette, the main ingredient in the tortilla paisana is potatoes. The differentiating element is that other vegetables are also added, such as peppers or peas, and meat elements such as ham or chorizo. This omelette is called “paisana” because it shares origin with the potato one: Spain. It is also a very versatile option that allows you to add vegetables and meat that you have in your kitchen at that moment.

Tortilla with chorizo or tortilla de jueves lardero

The tortilla with potatoes and chorizo is an excellent idea to add more flavour to the classic recipe thanks to this sausage. This tortilla is very popular in Castile and León, especially in the area of Valladolid. It is also part of the Jueves Lardero tradition, which is the Thursday that marks the beginning of the carnival. Thus, for the celebration of this day, chorizo tortilla is eaten in Segovia, Guadalajara, La Rioja or Aragón.

Courgette tortilla

The courgette tortilla is one of the healthiest versions of this traditional dish of Spanish cuisine. The courgette is a vegetable that is very popular in our kitchen, as well as being inexpensive and full of nutritional properties. For this courgette omelette you will not need many ingredients, just onions, eggs and the courgettes themselves; plus olive oil and salt, which can never be missing.

Trinxat of the Pyrenees

The Pyrenean trinxat is the version of the Spanish tortilla that is furthest from its typical shape and one of the most curious preparations in the Catalan Pyrenees. Traditional of the historical region of La Cerdanya, the recipe is presented in different variants. One of them is in the form of an omelette, but without eggs. The typical winter foods are also used: potatoes, slaughter food (bacon and blood sausage) and cabbage. On the other hand, it can be presented as mashed potatoes, without forming the omelette.
