Spanish huevos rotos recipe (Eggs with ham and potatoes)

Each region has its own cooking classics and, without a doubt, huevos rotos or fried eggs with potatoes and ham are a traditional dish all over Spain. These eggs are an essential recipe that everyone likes. We can perfectly imagine that egg yolk that, when it breaks, starts to drip among the rest of the ingredients… Delicious!

The history of the huevos rotos or huevos estrellados goes back to 1846. Richard Ford, an English traveller and Hispanist, talks about them in the book Gathering from Spain. In it, he points out that fried eggs are the most humble culinary resource, together with lean bacon or ham. With time, this dish has earned a place among the simplest and most exquisite delicacies of our extensive gastronomy. The recipe is very easy. Do you want to know how to prepare them?

Ingredients:

  • 8 potatoes (about 1 kg)
  • 4 large eggs
  • 150 g of Serrano ham
  • Olive oil
  • Salt

How to make the huevos rotos recipe:

  1. Peel the potatoes, cut them into thin slices (not too thin) and put them in a bowl with cold water. If you prefer you can cut them into sticks like the classic French fries; huevos rotos can be prepared with both types.
  2. Drain the potatoes and put them on kitchen paper so that they are dry when you put them in the frying pan.
  3. Put the frying pan on high heat and cover the whole bottom with approximately one finger of oil.
  4. When it is hot, add the potatoes and lower the fire to a medium temperature so that they fry properly for about 15 minutes. Add salt to taste on top. They will be ready when the outside has a slightly crispy layer but the inside is tender.
  5. Take the potatoes out, put them on kitchen paper to remove the excess oil and set them aside.
  6. Raise the temperature of the fire, make it high, crack the eggs one by one and fry them. In less than a minute it will be ready (do not let it cook too much, and make the yolk as liquid as possible). Put them on a plate.
  7. When you have all the eggs ready, lower the heat and leave it at a medium temperature, remove the oil from the pan and pour the potatoes in. When they are hot, put the eggs on top and turn off the heat.
  8. Cut the ham into pieces with your own hands and put them on top. Now, with everything very hot you can serve the huevos rotos!
  9. As a final touch, you can sprinkle salt on top or ground black pepper.
