Chestnuts with Milk Recipe, a typical autumn dessert

With the arrival of autumn, chestnut trees begin to open their small roasted chestnut stands in some of Spain’s most important cities. It is undoubtedly the ideal time to start preparing recipes with this sweet and rich nut. For this reason, today we bring you our recipe for chestnuts with milk; to enjoy the taste and texture of this very special ingredient.

In Spain, and despite the fact that it is not the largest producer country, the region of El Bierzo in León as well as almost all the forests of Galicia, produce chestnuts of excellent quality. So much so that even the Galician chestnut is protected by a PGI. Do not hesitate to enjoy such a nutritious and tasty food so important in our culture.

Ingredients for preparing Chestnuts with milk

  • 500 g of chestnuts
  • 1 L of milk
  • 200 g of sweetened condensed milk
  • 50 g sugar
  • 1 cinnamon stick
  • A handful of anise
  • 1 shot of orujo cream (optional)

How to Make It:

  1. The first thing before starting the recipe is to prepare the chestnuts. In order to remove the shell, they must first be cooked. To do this we will make a cut in the shell of each chestnut; that way it will come out much easier.
  2. Once the chestnuts are ready, we put a pot of water on the fire to heat it up with a pinch of salt. You can also add a handful of anise to give flavour during cooking. Add the chestnuts and cover the pressure cooker. Leave to cook for 15 minutes over a medium heat once the pressure cooker starts to boil.
  3. Once cooked, remove the chestnuts from the pot and set them aside until they warm up a little. It is best to peel them while they are still hot, this way the shell will be removed more easily.
  4. From now on we only have to add the peeled chestnuts in a pot, together with the milk and the cinnamon stick to cook everything over a medium heat for at least 25 minutes or until the chestnuts are very soft.
  5. To finish the recipe, just add the condensed milk, the sugar and the shot of orujo cream (optional) to finish flavouring our Chestnuts with milk. It is important to stir often during the whole process to avoid that the mixture sticks. You can either leave the recipe as it is, or pass it through the mixer to turn the mixture into a smooth cream; that will depend on your taste. There is nothing left to do but enjoy this delicious dessert!
