Right in the middle of the Catalan Pyrenees, only a few kilometers away from the National Park of Aigüestortes i Estany de Sant Maurici, the village of Escaló is located. The gastronomy of this little town is based in their ranching tradition, which means that the meat is the main pillar of everything there is to eat in Escaló. The lamb breed xisqueta is one of the most appreciated meats, and can be roasted or grilled. The cow ranching produces excellent pieces such as entrecôtes, sirloins and large steaks. The pork is used in the elaboration of all kinds of embutidos (sausage) during the winter. The hunting bring ingredients for the wild boar stews, rabbit and roe deer, which can be completed with mushrooms from the surroundings of the village during the months of spring and autumn. Regarding the fish, the trout is the most common one, usually fished in the rivers that surround the town. Finally, the cow and sheep milk produces delicious cheese that are perfect to finish any meal.
