Recipe for Flemish Eggs or Eggs “a la Flamenca”

The eggs ‘a la flamenca’ recipe is very simple and children and adults love it. It is a very versatile dish, so it is difficult to say that exists an unique recipe, since you can add as many other ingredients as you want such as asparagus, beans… It is said that its origin comes from bars of Seville that began to combine vegetables and cold cuts with baked egg. Its ingredients gave it that reddish colour that made it be named “Flamenca”. And to accompany this delicious dish, there is nothing better than a good red wine of Granada. Shall we begin?

Ingredients of the Eggs A la Flamenca:

  • 1 kg grams of ripe tomatoes
  • 160 grams of onion
  • 200 grams of peas
  • 750 grams of potatoes
  • 6 slices of Serrano ham
  • 50 grams of chorizo
  • 2 red peppers
  • 4 eggs
  • 5 tablespoons of olive oil
  • Oil for frying

How to Make the Eggs A La Flamenca:

  1. We put oil to heat in a frying pan. When it is hot enough, fry 2 slices of ham cutted into 4 pieces. Set them aside in the heat.
  2. In the same pan, add 8 pieces of chorizo of a centimeter of size and after having removed their skin, set them aside with the ham.
  3. We begin cooking the tomato. To do this, we cut the onion in very thin slices and add them to the pan where we fried the ham and the chorizo (if there is little oil left, we add more). Cook it over a medium heat for about 10 minutesdepending on the thickness of the onion. We add the tomato, of which we have previously removed the skin and cutted into small pieces. Let it cook for about 15 minutes.
  4. On another pan we will make the fries. We peel and cut the potatoes into small squares, and we will put them in a pan with very hot oil. We will remove them when they turn golden brown.
  5. After 10 minutes of the tomatoes,  include peas, pepper (chopped) and the rest of the ham and chorizo, and let simmer for a few minutes.
  6. Finally, once drained the fries, add them to the mixture for two minutes so that all ingredients are mixed together well and acquire flavor. Remove from the fire.
  7. Now we will divide the mixture on 4 plates of clay and include an egg in each of them. Put everything in the oven until the yolk is set.

Tips:

  • If using fresh peas, we will have to put them into boiling water for 10 minutes before including it in to the tomato.
  • You can use tomato sauce to avoid having to do it, although the result is not so delicious. Before including all the ingredients, try the tomato to see if you need to add a little sugar when it is very acid. This will not be necessary if we let the onions cook slowly.
  • The egg can be fried and included into the mix if you don´t have the right container for the oven or want to accelerate the recipe.
