The local cuisine is very similar to what you could find in the rest of the Burgos province. The main dishes you can eat in Villafranca Montes de Oca are the cabrito (roasted lamb), the cordero lechal asados (suckling lamb), the caldereta de cordero (lamb stew) and a variety of hearty soups with vegetables and garlic for the cold winters. The soups are very necessary during the many winter nights that reach temperatures below zero.
This town, bordering the Demanda mountain range, is well-known among hunters so local establishments offer dishes or tapas with game meat. Throughout the spring and summer, they mostly offer carne de corzo (deer meat), and from September to March boar and deer, along with rabbits and birds.
We recommend eating traditional dishes in Villafranca Montes de Oca, like garlic mushrooms and scrambled mushrooms. This is a town rich with mushrooms during the fall.
For tapas, you will find products typical of the province – embutidos, especially the morcilla de Burgos and chorizo (types of sausage)- fresh Burgos cheese is also typical, and often produced in the nearby town of Briviesca.
