THE SHEPHERD’S BREADCRUMBS RECIPE

The recipe for the shepherd´s breadcrumbs or “migas del pastor” is well known throughout the Spanish geography. There are many ways to prepare this delicious dish and according to the place in which we find ourselves, people add their own local ingredients. The simple recipe is done only with garlic and olive oil, but this time we will add a bit of chorizo (spanish saugage), red pepper (choricero type) and, if you want to, a fried egg. This is a very tasty way of preparing this dish, which shows different flavors that combine perfectly. The key for a successful result is the employment of a good bread. The best choice will be a homemade bread, with plenty and dense crumb. Shall we start?

Ingredients for 4 people:

  • 500 grams of bread of a couple of days before
  • A piece of chorizo
  • 5 cloves of garlic
  • 1 red pepper
  • 1 teaspoon of paprika
  • 4 eggs
  • Virgin olive oil
  • Water
  • Salt

Preparation of the Recipe

  1. We will use a bread of one or two days before. We will begin by crumble it, preferably in small pieces.
  2. Once crumbled, we soaked it with salt and water. When everything is moistened, cover it and let it rest for a day.
  3. We begin the recipe by peeling the garlic.
  4. We prepare a frying pan with half of a glass of olive oil and fry the garlic.
  5. When the garlic begins to toast, add the chorizo and the chopped red pepper.Sauté.
  6. Once all ingredients are cooked, add a teaspoon of paprika and all the cutted bread into the pan. We must pay special attention to keep the bread pieces separate and do not form blocks so that everything gets well browned. Move and keep separating the pieces of bread, since the smaller they get, the better.
  7. We know that it is finished once everything is golden. Let stand off the heat and covered it with a rag.
  8. Meanwhile we can fry the eggs in another pan with oil. When it comes to serve, we can place the ourcrumbs and the egg together or separately.
