Spanish Tarta de Santiago (Almond Cake) Recipe

The tarta de Santiago together with the filloas, are the traditional sweets or desserts of the Galician community, such is the tradition and link of the this cake with Galicia that is a protected geographical indication. Ingredients for the Tarta de Santiago Recipe:

  • 250 g ground almonds
  • 5 large eggs
  • 250 g sugar
  • Zest of a lemon
  • A teaspoon of cinnamon
  • Icing sugar for decoration

How to Make the Recipe:

  1. Add the eggs and sugar to a bowl. Beat well with a whisk to mix them and then add the grated lemon zest and cinnamon.
  2. Once the mixture is well beaten, add the ground almonds and mix again. The dough is ready!
  3. Spread oil or margarine on a round cake tin with a diameter of about 22 cm and sprinkle with flour (so that the cake does not stick).
  4. Bake at 180ºC for 30 minutes until it is cooked and lightly browned. Then let it cool completely.
  5. To decorate the cake, place the Cross of Santiago stencil on it and sprinkle with icing sugar. Remove the stencil carefully, so that the silhouette of the cross is left.
