Mussels in vinaigrette recipe, a delicious starter

Here is the recipe for mejillones a la vinagreta or mussels in vinaigrette, an easy preparation to enjoy one of the most representative seafood of Spain, the Galician mussels. An idea as a starter for the New Year’s festivities or as a refreshing appetizer for the summer. To prepare it you just have to follow our steps and buy good fresh products.

Ingredients to prepare the mussels in vinaigrette

  • 1 kg of mussels
  • A red pepper
  • 1 green pepper
  • 1 small sweet onion
  • Bay leaf and water
  • Olive oil, vinegar, salt and pepper

Preparation of the mussels in vinaigrette

  1. Clean the mussels and boil them for 3-4 minutes with bay leaf and water until the bottom of the pan is covered.
  2. Prepare the vinaigrette in a bowl by adding all the ingredients cut into small cubes, the peppers and the sweet onion.
  3. Add the oil, vinegar and salt to the vegetables and season with pepper if desired. It is recommended to prepare the vinaigrette earlier to make it tastier.
  4. Finally, simply stuff your mussels with the vinaigrette. Well stuffed and you are done!
