Michirones, a quick recipe to fight the cold weather

When the wind starts to blow and the months go into winter, the cold creeps into your bones, no matter how much warmth you wear. What better way to warm up than from the inside, with some comforting food? Michirones are a comforting dish based on beans. It is also a nutritious, filling and spicy recipe. Also, this recipe of michirones, typical of Murcia and some areas of Almería and Alicante, is simple but powerful due to ingredients that accentuate the flavor. Cooked over low heat, michirones are, in short, the ideal dish to palliate the effects of the winter cold.

Ingredients for four portions of michirones

  • 500 g of dried beans
  • 2 sliced chorizo sausages
  • 200 g diced ham
  • 150 g of pork belly in cubes
  • 1 whole head of garlic
  • 2 bay leaves
  • 2 chili peppers
  • 2 teaspoons of sweet paprika
  • Salt and water

  1. The first and most important thing is to rehydrate the dried beans. To do this, soak them in cold water for 18 to 20 hours, changing the water once. That will be more than enough.
  2. In a pot, add all the ingredients mentioned above. The ham can be added whole and then reserved for other recipes such as croquettes. It can also be added in small cubes so that they fit in the spoon.
  3. The important thing about the michirones is that they bite. Although this is a matter of taste, of course, they have to bite. To do this, cover all the ingredients with just enough water and cook over medium heat for at least 50 minutes. Once the time has elapsed, taste the salt and cooking until it is to the taste of each one.
  4. A very simple spoon recipe, perfect for winter and those moments when you need a little joy at the table.
