Ham Croquettes Recipe

Virtually all (or, at least, most) Spanish restaurants and bars include croquettes (“croquetas,” in Spanish) on their menu. This is a classic recipe enjoyed by the young, the old, and every Spaniard in between. Depending on which ingredients you use to make the bechamel, the flavour will turn out very differently. Today, we’ve prepared for you a delicious recipe of ham croquettes. Let’s do this!

Ingredients for ham croquettes:

  • 200 g of chopped up ham (according to preference, you can add more or less ham)
  • 40 g of butter
  • 3/4 l of whole milk
  • 1 spoonful of virgin olive oil
  • 75 g of flour
  • nutmeg

For the batter:

    • 2 eggs
    • 1 plate of breadcrumbs
    • flour
    • salt


  1. Chop up the ham in the smallest pieces possible.
  2. In a large pan, add the butter and spoonful of oil. Once the butter has melted, add the ham and the flour. Mix well.
  3. Once mixed, add warm milk little by little.
  4. Mix vigorously and continuously until the consistency of the dough is homogenous and without lumps. Now, add the salt and nutmeg.
  5. Add the dough in a bowl and let it cool for approximately 24 hours in the refrigerator.
  6. Once the dough is cool, you can begin to mold the croquettes. Individually steep the dough in flour, then beaten egg, and then bread crumbs, until the bread crumbs fully cover the croquette. Now, fry them in oil.

Small Tips:

  • The dough should be made without hurry, mixing continuously. The flavour of the croquette depends on this.
  • The croquettes shouldn’t be fried at the same time – it’s better to do it little by little. The oil must be extremely hot, so they came out nice and crunchy on the outside and juicy on the inside.
