Crema catalana recipe

Crema Catalana Recipe is the most traditional dessert from Catalonia. It is quite simple to prepare it. The only difficult part is to achieve its crunchiness at the end.   • 750 ml whole milk
  • 200g sugar
  • 50g cornstarch
  • 6 yolks
  • 1 stick of cinnamon
  • Lemon peel
  • Sugar to decorate

How to Make the Crema Catalana Recipe:

  1. Put the milk in a small glass and let the cornstarch get dissolved. Set aside.
  2. Clean the lemon and remove the peel. You should try to remove as much white thing as you can so that the the final product does not taste bitter. Leave aside.
  3. Mix the yolks and sugar in a bowl until you get a creamy mixture.
  4. Put the milk to boil in a bowl. When it starts boiling, lower the fire and add the lemon peel and the stick of cinnamon. Leave it to rest for 5 minutes. After this time, remove the lemon peel and the cinnamon. Add the mixture we just made along with the cornstarch.
  5. Mix in order that clots are not formed and make sure it does not boil. When it starts to thicken, remove from fire and keep on mixing for one more minute. It does not matter if the cream is a bit liquid because when it cools down it will thicken.
  6. Pour the mixture in individual containers. Sprinkle sugar and put it into the fridge to cool.
  7. To serve, use a blowtorch to burn the surface.
