Bizcochos Borrachos Recipe

The recipe for bizcochos borrachos comes from Guadalajara, in Castile La Mancha. The literal translation of this dessert would be ‘drunken sponge cakes‘, since these little cakes are soaked in a syrup called almíbar made with wine, sugar and water. In fact, the recipe is very easy because you only have to make a traditional sponge cake, cut it into rectangles and “get them drunk with a syrup”. Ingredients:

For the sponge cakes (bizcochos):

  • 120 g of flour (all-purpose or pastry)
  • 150 g of sugar
  • 4 eggs
  • 1 teaspoon of baking powder
  • Cinnamon powder
  • Butter

For the syrup (almíbar):

  • 250 g of sugar
  • 250 g of brown sugar
  • 1 glass of sweet wine
  • 1 glass of water

How to Make the Bizcochos Borrachos Recipe:

  1. To start the bizcochos borrachos recipe, separate the egg whites from the egg yolks and pour the yolks into a large bowl along with 150 grams of sugar until a smooth, creamy mixture is obtained.
  2. Gradually add the sifted flour and the yeast to the mixture.
  3. Beat the egg whites until stiff and gradually add them to the rest of the mixture. This will make the cakes fluffy, so you have to mix them very carefully.
  4. Preheat the oven to 180º, grease the container you are going to put in the oven with butter and sprinkle some flour so that it does not stick. The ideal baking pan would be square or rectangular, not too big.
  5. Pour the mixture and put it in the oven for 15-20 minutes or until the top layer is golden. When the cake is ready, let it cool down.
  6. Meanwhile, prepare the syrup or almíbar. Mix both types of sugar with water in a saucepan and stir. Let it boil until the sugar is completely dissolved, remove it from the heat and add the wine. Mix well and let it to cool.
  7. Unmold the sponge cake and cut it into small rectangles. Bathe them in the syrup until they are well soaked. Keep in mind that bizcochos borrachos are very sweet and soaked, so let them in the syrup for a few minutes.
  8. To finish, sprinkle your bizcochos borrachos with cinnamon powder.
