Cocido madrileño recipe

Cocido madrileño is the dish tourists love the most when coming to Spain. This dish has three parts: first you eat the soup, then the chickpeas with vegetables and finally the meat with potatoes. It’s a dish people normally eat in winter but you can eat it at any time of the year, since it is really yummy. This is the traditional dish that will delight everyone at home!

 Are you ready to cook the traditional recipe of cocido madrileño?

Ingredients for 4 people:

  • 280 gr chickpeas
  • 1 Quarter of chicken
  • 500 gr shank
  • Half a cabbage
  • Potatoes
  • 2 carrots
  • Ham bone
  • 1 chorizo
  • 1 morcilla (rice blood sausage) OPTIONAL
  • 1 piece of salt pork
  • 200 gr noodles (fideos)

Directions:

    1. Let chickpeas sit in warm water with salt overnight. Or buy already boiled chickpeas.
    2. Cook the bone with the salt pork, shank, and chicken in a pot with enough water to cover.
    3. When the water begins to boil, remove the excess foam.
    4. Add the chickpeas and let it cook over a low heat.
    5. Let it cook for two or three hours. Bear in mind that you need to add the carrots and potatoes already peeled in one hour and a half.
    6. Take some stock out of the pot and pour it into another pot. Now add the chorizo, blood sausage, and the cabbage. Cook for an hour.
    7. Once the chickpeas are cooked, remove from fire.
    8. In the stock (once you have already taken out all the ingredients you had put before) add the noodles or rice. Cook for 10 minutes.
    9. Serve the chickpeas and meat in a tray together with the vegetables. Serve the soup in another bowl.

    Advice: if you see there is not enough water when adding all the ingredients, you can add boiling water.
